When my husband and I arrived in Hong Kong earlier last March as official residents, we were temporarily housed in a serviced apartment for a month. It has a very small kitchen and there were limited kitchenware. That didn’t make me feel very comfortable to cook so I had to research online for fast, healthy, and simple salad recipes.
I came across this beautiful green salad recipe that looked too delicious so I gave it a go. It came out wonderful and both Sean and I loved it!
1 pack of fresh Kale
1 pack of arugula
1 120g classic green olives (La Espanola)
1 small packet of Feta cheese
1 medium red apple, cubed
1 small cucumber, cubed
A pinch of salt
Freshly cracked pepper to taste
A dash of extra virgin oil
2 tbsp red wine vinegar
After washing your greens thoroughly, add salt and olive oil then gently massage for a minute or two. This process is done to remove the roughness texture of kale. Mix in vinegar, apples, olives, cucumber and pepper. Serve and sprinkle with feta cheese.
