Gluten-Free Pancake

Seafood for breakfast? Nah, it’s just my (unintended) fish-shaped pancake. I think having a pancake first thing in the morning is everybody’s favorite. And why not, especially if it’s homemade? I make this every once in a while and it’s so yummy!

Here is my version of a homemade, gluten-free pancake.

Ingredients:

1 cup rice flour
3 eggs
1 tsp ground cinnamon
1 tsp salt
1 tbsp olive oil
½ cup fresh milk
½ cup crushed raw almonds
Choice of fruits for toppings
Butter and honey

Method:

Combine all ingredients and whisk until all blended. Let stand for an hour at room temperature. Use a deep ladle (or a soup spoon) to scoop the batter and cook in a pan for 2 minutes or until both sides are brown.

Serve with butter or honey or jam and fruits.
